The role of Chef de partie sits within the Facilities Department at the Club's Hale End site. The overall brief of the department is to provide world-leading facilities and an elite training environment to ensure the utmost focus of all players and staff, while at the same time visibly upholding the Youth Academy's values and principles in all interactions with players, staff and visitors alike. All endeavours are centred around preserving a positive environment facilitates the players' development at the Academy.

The Youth Academy is regularly frequented by players' parents and families, teachers, as well as visiting teams and families.

Arsenal Football Academy is a non-residential football training programme for elite youth players between the ages of 9 to 16, based at Hale End (E17).

The aim of Arsenal Football Academy is to centre each boy's progression as a footballer by providing a world leading youth development programme which encompasses coaching, technical and athletic development, holistic education, and a varied game, tours & tournaments schedule.

Work Schedule

Chef de partie will be on a causal contract meaning hours will vary from week to week. This is dependent on academy timetable, match days and business of restaurant. Expected weekly hours ranges from 35-40 per week.

The canteen/restaurants will be open until 8pm on weekdays and 4pm on weekends (unless special events or matches are taking place) so no late nights and weekend evening off.

KEY RESPONSIBILITIES

  • Cooking and servicing food as per specifications.
  • Follow kitchen procedures and health and safety regulations.
  • Cook and service nutritiously designed menus for Academy players on day release as per specification (approximately twice per week).
  • Aid Head chef and sous chef in the design of menus. This includes staff menu (20/40 pax per day), parents & paying customers and Academy players on day release as well as on match days
  • Ensure Kitchen is stocked ready for service
  • Assist Head chef/ Sous chef in stock management, ensuring food items are ordered on time and a first in first out (FIFO) system of stock rotation is in place
  • Maintain records of all food safety programmes (HACCP) and correct use of the cleaning rota and closing down procedures.
  • Maintain all equipment within the catering operation through due care and diligence as instructed.
  • Ensure quality control measures and hygiene systems are achieved at all times.
  • Comply with nutrition and sanitation regulations and all industry hygiene and safety standards.
  • Uphold all Club policies, in particular Health and Safety and Safeguarding.

MAIN JOB REQUIREMENTS AND PERSON SPECIFICATION

Education/Qualifications/Training:

  • Food hygiene and safety certificate level 2
  • Health and safety
  • Food allergen and intolerance training certificate
  • COSSH training certificate

Specific Experience:

  • Proven experience as a Chef de partie in a similar or relatable environment
  • Minimum 2 years catering experience in a similar or relatable environment

Abilities/Skills/Knowledge:

  • Outstanding communication skills and a 'can-do', customer focused attitude
  • Keeps up-to-date with culinary trends and optimised kitchen processes
  • Able to manage demands during times
